Sourced from lush forests of the Toledo District in southern Belize, the beans for this bar come from Maya Mountain Cacao, who work with hundreds of small-holder farmers to supply these premium organic beans to craft chocolate makers all over the U.S. and the world. The farmers carefully grow and harvest the cacao, and then sell the beans wet to the folks at Maya Mountain Cacao, who then take the beans to a central processing facility to be fermented, dried, bagged and exported. This ensures that all the cacao is fermented in a uniform manner in order to develop the full flavor potential. The farmers are paid well-above fair trade premiums for their cacao without having to have the infrastructure to ferment and dry.
